Try this easy classic Egg Salad Sandwich recipe that is perfect for lunch or any light meal. Great also as on-the-go food for your family road trips or picnics.

Egg Salad Sandwich Recipe

One of the easiest meals to make when you are in a hurry or pressed for time are sandwiches. They are a blessing in our household especially now that we are very busy with our new project... and that is we are building our own house. ?

Of course, we are not doing the actual work but planning each room and looking for materials and stuff, on top of (trying to ?) keeping the blog running... we are almost always working or on the move.

I lost count of how many furniture, appliance and hardware stores we've visited the last months looking for tiles, sinks, bathroom fixtures and, of course, my kitchen stuff!

Oh yes, I am very excited to see how our kitchen would look like once it is done. I am aiming for a farmhouse kitchen style and had to plan every cabinet and drawer, down to the knobs and handles. I will share the photos once the house is finished, hopefully in a month!

So the blog has taken a back seat (again) while things are moving fast with the construction of the house and we have to keep up with our designs. That means also that I very seldom have the time to cook lately.

So sandwiches to the rescue!!! And this Egg Salad Sandwich recipe has saved my skin for more than a few times now. It is so easy to make especially if you have hard-boiled eggs ready, which I usually do. I would boil a couple of eggs in a batch and put them in the fridge (unpeeled) and they can keep for about a week.

I find it so practical having them ready when I do not have the time to prepare a more elaborate meal, then I can make this Egg Salad Spread in a couple of minutes. I love adding hard-boiled eggs to my green salad or just enjoy it as it is with a pinch of salt.  ? It is economical too as it is delicious, Egg Salad Sandwich is great to bring along during a family road trip or just going out to enjoy the summer. It will save you some bucks eating out in fast-food or restaurants, have a simple picnic instead.

Ingredients
 

  • 5 pieces hard-boiled eggs
  • ¼ cup mayonnaise
  • 1 teaspoon dijon mustard
  • 1 stalk green onions - chopped
  • 3 tablespoon pickle relish
  • ¼ cup chopped celery (optional)
  • ⅛ teaspoon salt
  • ⅛ teaspoon ground pepper
  • 5 pieces croissants - can be other bread

Instructions
 

  • Cut hard-boiled eggs into small dices using a knife or egg slicer.
  • Place all chopped eggs into a bowl and add the mayonnaise and mustard. Mix just until blended. Add the chopped green onions, pickle relish, and chopped celery in the bowl and season with salt and pepper. Mix well.
  • Cut croissant in half. You may put a layer of lettuce on one slice of bread, spread the egg mixture on top of the lettuce, put another slice of bread on top.
