The secret to the most tender beef Stir-Fry

Use the best cuts of beef.  Beef stirfries, the best cut is the tenderloin. It is the most tender cut of beef that works well for fast cooking. Other cuts that can be used are top loin, shoulder center, sirloin, ribeye, tri-tip, and flat iron.

Flash cooking. For these cuts of beef, the secret is to cook them or sear them at a high temperature and very quickly. As soon as the meat turns brown, you can remove it from the pan and just let it cook from the residual heat. This will not also ensure fork-tender meat but will remain juicy as well.

Cut thinly and across the grain. By simply slicing across the grain can already makes your beef more tender and easier to chew. Cutting thinly will also lessen the time for cooking so it will not get chewy and tough.

I tried following the recipe for servings of 6 which required me to put 15 tablespoons of oyster sauce. The recipe was just too salty even if I lessened the amount to 10. Next time, will definitely put less.

Hi Athena, I am not sure where you got the 15 tablespoons of oyster sauce, because it says only 5 on the recipe and way is already double that amount.

Great recipe! Even my picky 4yo liked this. Will double or triple the sauce next time because it is so good over rice. 🙂
