I did it! I was able to convert Armin to like avocados! Mission accomplished indeed! Well done Bebs (*patting myself at the back*)!

Yes, Armin was not very fond of avocados. He told me this every time over the last 5 years whenever we go to buy groceries and I see avocados being sold in the produce section. I was always a tiny bit disappointed... how could he not like avocados!!! Oh but now, he is the one who proactively searches for them in every food store or market we go.

The reason...avocado ice cream! Hahaha! He's crazy about them! And since avocados hit the market early springtime, we seem to have avocados all the time now!

I do not know why, but seeing avocados makes me nostalgic, I know, weird right! I guess it's because it reminds me of home, albeit the avocados we get here in Germany are from Spain and not from the Philippines. It also brings back happy childhood memories.  I remember the feeling of being excited whenever I watch our Mama make avocado ice cream when we were kids and at the same time feeling impatient while waiting for it to harden a bit in the freezer. We did not have an ice cream maker (I don't think there is any at this time), so she would just mash the ripe avocados with a fork and then add the milk and condensed milk and that is it! So simple and it was pure happiness!

Now, I also still do not have an ice cream maker but I use a stab mixer to make things easier. And instead of milk, I use yogurt, just to give it a touch of tanginess to contrast the sweetness of sugar or sweetened condensed milk.

Ingredients
 

  • 1 avocado
  • ½ cup plain yogurt
  • 6 tablespoons sugar
  • ¼ cup milk

Instructions
 

  • Place all ingredients in a blender or bowl of stab mixer and pulse until it becomes smooth and creamy.
  • Transfer the content into a plastic container with a lid or popsicle forms and put in the freezer for at least 2-3 hours or until they harden.
